Muesli bars are a crunchy and delicious treat, and using Søstrene Grene’s organic muesli it does not take much shopping or many preparations to make your own flavourful muesli bars. Use Søstrene Grene’s organic muesli to make deliciously crunchy and filling muesli bars, adding your own favourite ingredients for even more flavour. Anna loves cranberries, but you can easily replace the dried cranberries with whatever your children or family may prefer. Anna suggests raisins, nuts or good-quality dark chocolate, chopped into small pieces. Or you can simply add whatever ingredients you may already have in your cupboards. In this way, the muesli bars can also help prevent food waste. To make the muesli bars look particularly inviting and easy for your child to handle, wrap each bar in parchment paper and tie with a piece of string. For a more filling lunch box treat, try Anna’s recipe for great-tasting lunch box bread with vegetables and cheese, which works both as a snack on its own or with a sandwich filling. Anna and Clara wish you joy in your efforts.
Makes: 10 muesli bars Preparation time: 15 minutes Baking time: 25 minutes
In a bowl, beat the egg lightly. Add the syrup and the dry ingredients and mix well. Line a tin (approx. 10 cm x 30 cm) with baking paper and spoon in the muesli mixture. Press into the corners and flatten the mixture. You may like to place a sheet of baking paper on top to make it easier to flatten using a spoon or your fingers. Remove the top sheet of baking paper and place the tin in the middle of a preheated oven at 175°C. Bake for 25 minutes. While still warm, remove the baked muesli mixture from the tin and score into bars using a sharp knife. Place the muesli bars in a cake tin and store in a dry and cool place for up to one week.
