Slice the strawberries and pour them into a pot.
Add sugar, the scraped seeds from the vanilla pod, lemon juice and water. For a more intense vanilla flavour, add the empty pod as well.
Frequently stir the mixture and make it simmer for 15-20 minutes.
Use a sieve to strain the strawberries from the liquid.
Rinse the preserving jars in scalding water. Hereafter, pour the strawberry syrup.
