"One, two, three…" Clara counts as she arranges the meringue kisses on a platter in preparation for welcoming some dear friends to an afternoon filled with 'hygge'. Do as the sisters and make your own charming meringue kisses with only a few ingredients.
Preheat your oven to 100 C fan.
Pour the egg whites into a bowl and stir with an electric hand mixer or a stand mixer until the eggs are fluffy.
Add sugar gradually and beat the egg mixture until stiff.
Add vinegar and beat the mixture once again. If you wish to colour your meringue, you can add powdered food colouring at this step. "You can also separate the mixture into two and hereby make two different colours," Clara suggests.
Add the meringue mixture to a piping bag with your desired nozzle.
On a baking sheet lined with baking paper, pipe the meringue into small kisses with a diameter of approximately 3 cm.
Bake your meringues in the preheated oven for an hour.
Turn off the oven and leave your meringues to cool in the oven.
When the oven is cooled, take out your meringues and carefully remove them from the baking sheet.
While your meringues bake, whip the mascarpone and cream together until it reaches a fluffy and uniform consistency. Add lemon curd to the mixture and pour it into a piping bag with a round nozzle.
When your meringues are cold, you can assemble the meringue kisses. Pipe a small dollop of filling onto the bottom of one meringue and add another meringue so the filling will be in the middle. Repeat this step with the remaining meringues.
Now you can serve your meringue kisses on a beautiful platter for your loved ones. "Or let the meringues be a small treat for yourself," Clara says with a sparkle in her eyes.
