Stir the butter until uniform in texture. Add powdered sugar, vanilla paste and grated lemon zest while mixing at low speed. Add the egg while mixing.
Mix salt and sifted flour in another bowl. Add the flour mixture to the butter mixture and stir it gently until it turns into a smooth dough.
Shape the dough into a ball and press it flat. Wrap it in plastic wrap and let it rest in the fridge for at least two hours - preferably overnight.
Set the oven for 200 degrees top and bottom heating.
Roll out the dough between two pieces of baking paper to a thickness of about 4 mm and cut out the cookies. Spread the cookies on a baking tray covered with baking paper and bake them in the oven for 6-7 minutes.
When the cookies are done, place them on a baking grid to cool. In the meantime, make the icing by mixing egg whites and powdered sugar until the icing is thick and shiny.
Dip the cookies in the icing and sprinkle them with dried rose petals.
