Cat cake with vanilla sponges and chocolate mousse
Bring joy to the youngest with the sisters' festive cat cake. "A fun cake to surprise the dear little ones with, or to make with them," Clara suggests while she admires Anna's cake decoration.
First, make the dough for the vanilla sponges. Turn the oven to 180 degrees. Place baking paper in the bottom of the springform tin, and apply butter to the edges.
Mix together sugar, flour, vanilla sugar, salt, baking powder and baking soda in a bowl.
Mix melted butter, egg and greek yoghurt in to the flour mix, and stir the dough until it has an even and smooth texture.
Spread the dough in a springform tin and even out the surface. Bake the cake in the oven for approx. 30 minutes. Let it cool off.
Now it is time to make the chocolate mousse. First, soak gelatine in cold water.
Chop the milk chocolate, and put it into a bowl.
Heat the cream to the boiling point, and carefully pour it over the chocolate little by little while stirring until the mass gets an even texture. Add a bit of sea salt.
Squeeze the moisture out of the gelatine, and add it to the warm chocolate. Stir the mix till the gelatine has entirely melted.
Cover the chocolate mousse with clingfilm, directly on top of the mousse. Now put it in the fridge for a few hours.
Take the chocolate mix out of the fridge, and whisk it into an airy mousse using a hand mixer.
Now assemble the cake. When the cake has cooled off, cut it into two cake sponges lengthways usind a breadknife. Now spread the chocolate mousse on top of one of the cake sponges, and place the other one on top. Also, add chocolate mousse to the top.
Now it is time to make the decorations for the cake. Melt the dark chocolate in a water bath, and pour the melted chocolate into a piping bag. Cut a little hole in the bag, and use the chocolate to paint the shape of a cat and fill it out with a thick chocolate layer. Let the chocolate set, and then place it on top of the cake. Finish the cake by decorating its sides with coarsely chopped chocolate nuts.
