Chocolate dreams with marzipan bases

"Irresistable!" Clara bursts out when the sisters' dear friend, the dessert chef, serves these chocolate dreams. Note that you can easily start preparing the cakes the day before they are to be served.

Turn the oven to 170 degrees.

First, make the marzipan bases. Mix marzipan and sugar with your fingers. Knead in the butter until the mix is smooth. Melt the chocolate and fold it in the mix. Finally, fold in the egg.

Spread out the mix in a 20 x 20 cm baking tin lined with baking paper. Bake the base for 15-20 minutes until it gives at a light press. Let the base cool off completely before cutting out the little round bases. The bases should be cut in the same size as the silicone mould. Put aside the bases.

Now, make the chocolate mousse. Bring the cream to a boil in a little heavy-bottomed pot. Chop he chocolate finely and put it in a bowl. Pour the boiling cream over the chocolate in the bowl and gently mix it until smooth. Put the mix in the fridge for 2-3 hours until completely cold.

When the mix is cold, whisk it gently to a thick mousse with a hand mixer. Do not whisk too long as the mousse may curdle. Put the mousse in a piping bag, cut a hole, and pipe the mousse into the moulds to about 0.5 cm from the top. Gently press a marzipan base on top of every portion of mousse, and put the cakes in the freezer for 4 hours or over night.

Now, decorate the cakes. Temper the chocolate, and dip the cakes in the chocolate, so the mousse is completely covered. Put the cakes on a little griddle or some baking paper and decorate them with gold dust, freeze-dried berries or chopped nuts.
