Delicious lemon curd ice lollies
As soon as she hears that the nephew and nieces will be visiting, Clara starts preparing these tasty ice lollies with lemon curd and wild berry jam. "Then they will be ready for the guests tomorrow," she smiles. Make your own summer treats with the sisters' simple recipe.
Whisk the cream into an airy mix. Add the Greek yoghurt and condensed milk. Lastly, whisk in the vanilla paste.
Find the ice lolly moulds and add half a teaspoon of lemon curd and half a teaspoon of wild berry jam first. Then, add a tablespoon of the cream mix. Continue alternating between adding lemon curd, wild berry jam and the cream mix until the moulds are filled.
Now, use a skewer or the end of a long spoon to draw the lemon curd and the wild berry jam out in the cream mix so you get beautiful swirls in the ice cream. Put lids on the ice lolly moulds, and leave them in the freezer. Freeze for at least eight hours, but preferably for longer.
When it is time to take the ice lollies out of the moulds, you can opt to leave them shortly under a running tap of lukewarm water, and then draw out the ice lollies carefully.
If you like, you can top the ice lollies with salted caramel, chopped almonds and dried flowers so they look extra beautiful.
