Mushroom toast with pine nuts and parsley oil
"Mushrooms have a wealth of applications in cooking," Clara thinks. Here, she has used different kinds of mushrooms and tasty wheat bread to create a light meal to share with Anna for lunch.
Cut the mushrooms in small pieces and fry them in olive oil on the pan until the mushrooms darken.
Add butter and chopped garlic and fry for about 3-4 minutes.
Add parmesan and cream and let it simmer in the pan until the cream is slightly reduced.
Add lemon juice, lemon zest, salt and pepper as you like.
Add a bit of olive oil to both sides of the wheat bread slices and fry them on a dry pan until the slices become crispy.
While the bread slices are on the pan, you can make the parsley oil. Chop the parsley and mix it with olive oil, salt, and pepper.
Spread the mushroom sauce on each slice of bread and add parsley oil. "Add a little extra to your mushroom toast by adding toppings of toasted pine nuts and perhaps a dash of chili," Clara says.
Your mushroom toast is now ready to be served.
