Rhubarb juice
When summer arrives, Anna and Clara are fond of using the garden's rhubarbs for both desserts, but also for cool drinks like this refreshing rhubarb juice.
Clean the rhubarb stalks and cut them into smaller pieces.
Pour the rhubarb pieces into a pot together with water and sugar.
Split the vanilla pod in half and scrape out the vanilla seeds. Add both seeds and pod to the pot.
Bring the pot to boil, and let the juice boil for about 10 minutes.
Remove the pot from the heat and let the juice cool down.
Sieve the rhurbarb juice using a funnel or a fine mesh sieve, and pour it into a bottle with a lid. "Avoid any waste by using the discarded rhubarb for a lovely breakfast compote," Clara recommends.
Now, the rhubarb juice is ready for mixture. Dilute the juice with about 1 litre of water, depending on how strong you like it.
